Originally founded in 1842 by the first Count of Ybarra, Don Jose Maria de Ybarra y Gutierrez de Coviedes, it remains in the familys hands six generations later. Originally drawn from his estate in the Aljarife region of southeast Sevilla province. Aljarife manzanilla table olives there are noted for their plumpness, size and flavor. A taste of Spain December 26, 2008
I returned from my second trip to Spain a few weeks ago and have tried to find the olives that are served everywhere you go in southern Spain, to no avail. Finally, I found a small jar of YBARRA olives, specifically the "Alta Seleccion Aceitiunas manzanilla verdes ENTERAS."
Ole! If you too are trying to recapture a bit of the wonder of Spain these are the olives you are dreaming about. The cheese in my case in Manchego from La Mancha.... I digress. These olives are hard to find, I just ordered the last jar. I hope they are restocked soon.
