Product Description Single Gloucester was originally made from a blend of unpasteurized milk from the evening and morning milkings of a dairy herd. The cheese was intended to ripen quickly and be eaten when young on the farms where it was made. It was typically only aged about two months and had a firm but smooth texture. Today only small quantities of this cheese are made, and they are made using quite a different recipe. Either one or both of the milkings is skimmed, and the cheese is aged for nine months to a year. This results in a much dryer, more crumbly cheese.
